Hushpuppies

With summer among us here in Arkansas and with a hubby who loves to fish, we have a lot of fish fries around our place. This is a new recipe that is the best hushpuppies I have ever had. Just give me some hushpuppies and ketchup and I got a meal.
My sister-in-law was kind enough to share it with me,Thanks Crysti !


1 cup plain flour
1 cup plan corn meal
1/2 teaspoon baking soda
1 tsp salt
3 tsp baking powder
1/4 cup sugar
2 eggs
1/2 cup of finely chopped onion ( I substituted 1/4 cup chopped jalapenos)
1 cup buttermilk
Spoon into hot grease and deep fry.

Yummy Cake

Cake anyone ?

I was going to bake a Yummy Cake to take along to a dinner we were invited to today but I didn't have the correct ingredients. In my recipe below I have put to the side what I used in my cake today. Both ways makes a wonderfully tasty cake and so easy to make.

1 Butter Pecan cake mix ( I used a chocolate cake mix)
4 eggs
3/4 cups oil
1 cup water
Mix well then add 1 tub of Coconut Pecan Frosting to the batter.
Mix well. Pour into whatever pan size you wish to use, greased and floured.
Bake at 325 till done.
Let cool then top with 1 tub of cream cheese frosting (I used another tub of Coconut Pecan)

♥ I Love Lucy ♥

I love Lucy, Chuck loves Lucy and I can't imagine how anyone who ever met her could not love Lucy but someone didn't. Someone dumped her on the side of a country rode about 12 miles from the closest town. She was found at the end of someone's driveway to scared to come to their house. They finally persuaded her to come home with them where they tried to find her a home and where about to give her to a Pit Bull breeder when I found out and begged them to give her to me. Chuck went and picked her up Friday. She must have around 100 ticks sucking the life out of her. Although she was being fed she was and is still very skinny. Of course she was in heat, maybe that's why her former ...not people...I can not/will not call them people...I call them low life's...maybe that is why they decided to just drop her of on the side of a road. What makes these low life's think a domestic animal can be dropped off and take care of itself. And why there are still so many low life's in the country that are still abandoning their pets is beyond me. I wish I had a built in radar so that when I'm out in public I could automatically detect these LL's. I have always done my best to treat others with respect and as I wish to be treated. But anyone who could treat a animal like this I refuse to give the time a day to. So, I would love to know who they are so that I don't even have to waist my breath saying hi to them any longer.
I don't think Miss Lucy is very old, maybe a year. She already knows how to fetch, loves to play ball and she is house broke !
Lucy is now our foster dog. I truly believe she is a real life clown in a dog costume.

Twilight saga soundtracks are here!


Ok, ok, ok, I promise soon, I will find something else to talk about but its been rainy out and I have had just a tiny bit of extra time on my hands. So I have been reading all the Twilight blogs again. I found one with the soundtracks for New Moon, Eclipse and Breaking Dawn. I'm not sure when the movies actually come out that these will be the actual sound tracks but they are fun to listen to. Here is the link if anyone wants to listen(scroll down page). This first song playing on my playlist is My Never by Blue October. Apparently when Twilight Author Stephenie Meyer first heard this song she was smitten with it because it reminded her of a page from Breaking Dawn. According to the lead singer Justin of Blue October he had Jacob in mind. About a person you wish could be yours but they never will be.They are your never.
(Mo, is that you in the background of this song yelling " I love Edward", LOL!)
